We do love pancake day!  But the same old thing every year can get a little repetitive, even if that thing is delicious pancakes.  So we went on a mission to find some more unusual recipes to try.

Strawberry Shortcake Pancakes

These pancakes are delicious with clotted cream and make a great dessert.

Serves 1-2

  • 50g chopped strawberries
  • 50g flour
  • 2 tbsp rolled oats
  • 1 tsp baking powder
  • Pinch of salt
  • 1/2 tsp pure vanilla extract
  • 1 tbsp sugar
  • 80ml milk
  • 1 tbsp unrefined coconut oil (Omit only if you like the taste of fat-free pancakes)

 Granola Pancakes

Great for breakfast or for a pancake with a little extra oomph.

Serves 4

  • 75g plain flour
  • 50g wholemeal plain flour
  • 1 large egg
  • 350ml semi-skimmed milk
  • 100g granola
  • 2 tbsp rapeseed oil
  • 2 pink grapefruit (optional addition for decoration)
  • 2 tbsp honey (optional addition to taste)
 

Cookie Dough Pancakes

Serves 1-2

  • 50g flour
  • 50g rolled oats (40g)
  • 1/2 tsp vanilla extract and optional 3 drops almond extract
  • 2 tbsp brown sugar
  • Pinch of salt
  • 1 tsp baking powder
  • 1 medium egg
  • 80ml milk
  • Chunks of chocolate
